1) Hotpockets Meatball & Cheese Sub Lasagna:

Special equipment:

Tall sided roasting pan.

Ingredients:

~ A shitload of Meatball & Cheese Sub Hotpockets
~ Spaghetti Sauce (probably a lot)
~ Mozzarella Cheese
~ Ricotta cheese

You'll probably need to pre-bake the Hotpockets, before using them as noodles. You know how it's done. Layer of sauce, layer of hotpockets, layer of ricotta & mozzarella, layer of sauce, layer of hotpockets. Repeat.

2) PattyClub

Ingredients:

~ Breaded and fried chicken patties
~ Mayonnaise
~ Provolone Cheese
~ Ham
~ Turkey
~ Tomatoes
~ Lettuce
~ BACON!

Cook the chicken patties, then use them as the bread to make a Club Sandwich.

3) NachoPotPie

Ingredients:

~ A Couple bags of Nacho Cheese Doritos
~ Taco Seasoning
~ RoTel Tomatoes with Chiles
~ Sour Cream
~ Canned Chili with Beans
~ Butter
~ Black Olives
~ Jalapenos
~ Shredded Mexican Cheese
~ Chili con Queso
~ Enchilada Tortillas

Crush the Doritos and pulse in a food processor with some cheddar cheese, until it's crumbs. Mix the crumbs with melted butter, and press into a pie pan. Blind bake, until it holds together.

Line the bottom of the crust with shredded cheddar cheese, and then a layer of tortillas. Boil and reduce the chili until it's a paste-like consistency, and then smear that over the tortillas. Top that with the (drained) rotel tomatoes, olives and jalapenos.

Pour Chili con queso over the tomatoes. Mix the sour cream with the taco seasoning. Cover tomatoes with a tortilla, and smear the tortilla with the spicy sour cream and shredded cheese.

Bake until bubbling.

Serve with Guacamole and salsa.

but then, you're not 30 yet and don't need to worry about these things. I'm sharing the recipe with the 21 yr old.

The hotpocket lasagna sounds really plausible, and the nacho potpie is not ulike the tamale pie my kids make, only with more stuff.

only, I've never had a hot pocket...
